Tasty Jain Vegan Recipes for Health > Hot Green Chutney
Ingredients
This makes 10 servings- 140 gramms of 2-3 different juicy Green Vegetables of choice. These vegetables must be green all the way through e.g. french beans, flat beans, green capsicums etc.
- 11 grams Chillies
- 45 grams Lime
- 45 Fresh Coconut
- 27 grams Peanuts
- Methi seeds, Rock salt, Cumin Seeds
Method
- Wash green vegetables
- Grind cumin and methi and store ready for use
- Mix chopped coconut, peanuts, salt, lime juice in blender jug. Blend slightly coarse, not compeletely smooth and keep aside for use later
- Blend green vegetables, lime juice, salt, green chillies, ground cumin and methi. Process till smooth
- Mix 3 & 4 thoroughly. Add water or more lime juice if necessary, to keep chutney wet/slightly runny
- Add spices as needed and blend them into some of the chutney and then mix all the chutney again
- This can be served with the Vegetable Bhel or Petis / Idli
